Edamame and Chickpea Snack

So today I wanted a yummy snack. I looked In the cupboards…just junk! Chips and cookies and pop tarts…blah! I opened the freezer and Ahhh (just imagine a choir singing that)….frozen edamame and frozen chickpeas! So I decided to experiment. I am so excited to share what I came up with!

6 oz frozen edamame (shelled)
1/4 cup frozen garbanzo beans
A spritz of nonstick spray
1/4 grated Parmesan cheese
A light sprinkle of onion powder and garlic powder

Mix all ingredients together. Bake at 400 degrees for 15-20 minutes and enjoy:)

I think this would serve about 4 people…although I might eat it all by myself!!



Outside of the Lunchbox school lunch ideas

Are you kids tired of the same old ham and cheese sandwich day after day at lunch? It is time to think outside of the lunchbox! Here are some healthy ideas for school lunch…

*Try different themes*


~Mini Waffles with a small amount of syrup or jam, a sliced hard boiled egg, and your child’s favorite fruit.

~Your child’s favorite cereal. Put some in a sandwich bag. Send in a mini bowl (like the small plastic kind in the baby aisle) Pack a single serve carton of milk or have you child buy a milk at school. Be sure to pack fruit to help fill them up!

~Bacon and eggs?!?! Sure! Pack a few slices of turkey bacon and hard boiled eggs. My children love Melba Toast so I will use that instead of regular toast (it might get stale or soggy.) Add yogurt as a side.

~Waffle with peanut butter and honey sandwich.

~English muffin with peanut butter.


~If your child likes tuna….make tuna salad. Cut the bread in the shape of a fish! Serve with goldfish cracker. Also if you have a fish cookie cutter cut out cantaloupe or honeydew!


~Chicken salad wrap. Add baked potato chips and some fruit.

~BBQ chicken pasta. Sounds weird, right? But it is fabulous and my children love it!

    Peanut Butter

~Crackers with peanut butter

~Celery sticks (well, any veggie) with peanut butter

The Very Best Chocolate Syrup!

My boys love chocolate milk…well so do I! Today I realized we were almost completely out! That is just unacceptable! So I decided to try to make my own for the very first time:) Here’s how I did it…

Chocolate Syrup

1 1/2 cup sugar
3/4 cup unsweetened cocoa powder
1 cup water
Dash of salt
1 teaspoon vanilla

1. In a medium sauce pan, add sugar, salt, and cocoa. Mix with a wire whisk.
2. Add water. Mix well
3. Bring to a boil. Remove from heat.
4. Add vanilla. Mix well.
5. Let cool. Put in your container of choice.

That is it!

This makes about 16 oz of syrup. I use about 1/2 oz. per 8 oz of milk. (1/2 oz = 2 weight watchers points plus)



This amazing meat loaf is fabulous for any day of the week. I lightened it up by using turkey instead of ground beef. My family loves it!


1 lb groung turkey
1/2 cup organic soy milk
1 Tbsp Worcestershire sauce
1/4 tsp dried sage
1/4 tsp salt
1/2 tsp dried mustard
1/4 tsp pepper
1/2 cup plain dried breadcrumbs
1 garlic clove, finely chopped (1/8 tsp garlic powder)
1/4 cup egg substitute
1 small onion, finely chopped
3-4 strips green pepper, finely chopped
3-4 strips red bell pepper, finely chopped
1/2 cup BBQ sauce, divided

1. Preheat oven to 350 degrees
2. Chop all veggies. (I used a small food processor to make them extra fine.)
3. Mix all ingredients except for 1/4 cup of the BBQ sauce.

It should look something like this…..

4. Divide mixture into 2 six count muffin tins.
5. Spread the rest of the BBQ sauce on each muffin.
6. Bake at 350degrees for 35-40 minutes.


Each muffin is only 2 weight watchers points + !!!
